Yay, I get to go first, heres the broccolli-salad from last night:lol:

1 broccolli in small pieces
3-4 tablespoons of mayo
1 cup raisins
1 cup sunflowerseeds
1 finely chopped red onion
red or white vineger
salt

Soak for a few hours (or overnight)
Enjoy

And for those of you who are vegan Very Happy; IAAIA has a great substitute for the mayo!
Come on honey, post it!!!

G'day Pollock.

Not a problem gorgeous, here it is .....

1 Spring Onion
1 inch Slice of Pineapple
1 Mint Leaf (large or 2 small)
2 Sprigs of Parsley
1 Clove of Garlic
Herb Salt (Vogel's is great)
Pepper
Nutmeg
Chilli Flakes
A Squeeze of Lemon
140ml can of Coconut Cream

Blend together and then put in the fridge for 1-2 hours and it's firmed up to use.

I've used this on a salad, with fritters and other things and it is beautiful. Enjoy !!!

Oh yeah, it's great for a potato salad or coleslaw as well.

G'day Soglad.

No worries mate.

Here's aother one that is VERY simple and can be used as a desert or a snack.....

On a peice of toast;

First layer is peanut butter,
Second layer is a banana mashed up,
Third layer is some sultanas,
Fourth layer is some honey drizzled over it,
Fifth layer is some sesame seeds.

Cinnamon or coco powder can be added on top for those that so desire it. Have one of these and you will definitely get the urge for another one.

I've got an excellent rice recipe I learned from a group of Iranians when I was living in Newcastle. It's cheap and really tasty, if anyone wants it I will put it up..

O.k. here we go.. This is the most basic version, but if you can get this down pretty well then you can begin to experiment.
As soon as I started writing it out I realized it might sound a bit complicated, but it's worth the effort. And it is dirt cheap

For 2-3 people..

2 cups basmati rice (must be basmati)
3 cups water
salt
1 med to large onion
vegetable oil
garlic (optional)
half teaspoon tumeric (optional)
1 lime
5 green cardamoms (if possible)
2 medium size bay leaves

Wash and rinse the rice of starch until the water is clear.
now soak it in salted room temperature water for at least 40 mins.
peel, half and slice the onions fairly thin.
using a peeler, take the skin off the lime, remove any pith left on and slice it as thinly as possible.
If using, roughly chop garlic.
open the green cardamoms and remove black seeds. keep shell also.

3 tablespoons of oil in pan on fairly high heat.
when hot add onions, stir until they begin to turn translucent.
now add the cardamom shells and bay leaves and stir gently for 30 secs.
add garlic and lime rind, stir for 20 secs.
add rice and stir for 30 secs or until coated
add tumeric. stir in.
add water.
add salt (half teaspoon)

Now turn it down to a low to moderate heat, cover and leave for roughly 7-8 mins, or until it's just beginning to stick to the pan.
Take off the heat.
with a spoon push the rice over to one side and put 1 tablesppon oil in to the pan. do the same on the other side.
with your spoon, pat down the rice, making sure it is as airtight as possible all over.
sprinkle the cardamom seeds over the rice.
place 3 lime slices on top.
Cover pot with kitchen towel to absorb the steam, place pot lid on towel and secure as best you can.
return to a low heat and cook for roughly 13-17 minutes.
when ready, lay out in an oven dish and carefully fluff it up with a fork
Season to taste. add more lime juice if needed.

No worries.. I've been eating it for years and just can't get bored of it Laughing it goes amazing with cucumber and mint dip and dry meat (if you eat it, I don't personally) or roasted spiced veg.. mango chutney is easy to make and also goes well, as does chapatti bread which is an absolute doddle to make..

btw, if you do it properly, the rice on the bottom and around the sides should be brown and crispy, it´s an absolute treat.. don't reheat the rice more than once though, it`ll start to go off..
